Executive Chef Laurent Austrui introduces the evening's menu
choices to servers in The Restaurant. (Staff meetings take place before and
after dinner each day.)
Chef Austrui, who was born near France's gastronomic capital of
Lyon, began his career at the five-star Hotel Royal Evian Les Bains on Lake
Geneva. In addition to having worked as a chef in London and Canada, M. Austrui
cooked in the Princess Grill on the QE2 and was executive chef with
Renaissance Cruises before joining Silversea in July, 2001. He has been chef on
the Silver Wind and the Silver Cloud as well as the Silver
Whisper.
