Starace in Silla di Sassano, Italy. The cheeses are aged up to a year before
consumption, and--when vacuum-packed--they're good for another six months before
opening.
TIP: Italian cheeses make great gifts, because they're usually
much cheaper in Italy than abroad. (But if you're bringing them into the United
States, remember that only hard, fully cured cheeses may be imported. Cottage
cheese, ricotta, and similar cheeses are forbidden by USDA regulations.)
